ALMOND SHORTCAKE

Preheat oven 375 | ||
| Prepare a 7x11" baking pan | |||
| In blender grind: | |||
| 1 T flax seed | |||
| Add: | |||
| 3 T water and let sit 10 minutes | |||
| Add to blender with flax and blend: | |||
| 1 ripe banana | |||
| 3 tbsp applesauce | |||
| 1 T lemon juice | |||
| Mix together: | |||
| 2 c almond flour | |||
| 1/2 t baking soda | |||
| 1/2 t salt | |||
| Mix all of the above wet and dry ingredients and spoon into baking pan | |||
| Bake 20 minutes | |||
