SEEDY CAROB CHIP MUFFINS

Preheat oven to 350º | |
| Prepare muffin tin for 12 | ||
| Blend: | ||
| ¾ c milk (dairy, soy, nut)+ 1 t lemon juice | ||
| 2 eggs | ||
| 2 t coconut or other oil or fat | ||
| Stir together: | ||
| 1 ¼ c whole grain flour (I like barley) | ||
| 1/4 c carob flour | ||
| 2 ½ t baking powder | ||
| ½ c wheat germ (opt) | ||
| ¼ c each: flax, sesame and sunflower | ||
| ¼ c carob chips | ||
| ½ t salt | ||
| ¼ c zylitol or 1/2-1 t stevia | ||
| ½-1 t cinnamon | ||
| Mix wet and dry ingredients well and spoon into muffin tins | ||
| Bake 25 minutes | ||
