SIMPLE PANCAKES

In blender or mixing bowl: | ||
| 1 c water | |||
| 1 egg | |||
| 1 banana | |||
| 2 T oil , butter or veg spread | |||
| 1/4 c nuts | |||
| 1 T baking powder | |||
| 1/2 t salt | |||
| 1 1/4 c whole grain flour | |||
| Blend all ingredients except flour and baking powder until smooth. Add flour and baking powder and blend until mixed. Let sit a coupe of minutes. Pour onto a medium hot greased griddle and cook slowly until bubbles appear on surface then flip and cook till done. Makes 4 medium pancakes. |

| May substitute 2 T coconut oil and/or 1 c coconut milk for a richer pancake | |||
