This can also be made easily by chopping potatoes and mixing them with the cashew spinach sauce then reheating and serving.
Blend:
1 c cashews, chopped
2 - 3 c water
2 t salt
1/8 t nutmeg
Cook until thickened
Slice 6 potatoes lengthwise, scoop out the center and cut into cubes.
Pour the above cashew cream over 2 c steamed spinach and the chopped potatoes. Mix well.
Spoon the mixture into the potato skins.
Sprinkle on paprika to taste.
Bake at 350 for approx 15 min.
