Stuffed Potatoes

Blend: | ||
| 1 c cashews, chopped | |||
| 2 - 3 c water | |||
| 2 t salt | |||
| 1/8 t nutmeg | |||
| Cook until thickened | |||
| Slice 6 potatoes lengthwise, scoop out the center and cut into cubes. | |||
|
Pour the above cashew cream over 2 c steamed spinach and the chopped potatoes. Mix well.

| Spoon the mixture into the potato skins. | |||
| Sprinkle on paprika to taste. | |||
| Bake at 350 for approx 15 min. | |||
