TOFU FILO BAKE

Preheat oven to 375º | ||
| Oil an 8x13 in baking dish | |||
| Melt 1/4 c butter or vegetable spread | |||
| Steam or saute: | |||
| 2 large bunches of kale or collards | |||
| 1 med onion | |||
| 2 T oil, if sauted | |||
| Blend: | |||
| 1# tofu, soft | |||
| 4 eggs | |||
| 1 T Italian seasoning | |||
| 1/2 t salt | |||
| Mix the above with veggies. | |||
| Layer filo, buttering each sheet and overlapping over sides. | |||
| Spoon mixture onto filo. Overlap and butter each sheet. Tuck in ends. | |||
| Bake 45 minutes. | |||
