VEGETARIAN CHILI

|
Soak beans overnight or put into pressure cooker and cook till soft: | |||
| 3-4 cups of dried pinto beans | ||||
| 1-3/4 cup brown rice or buckwheat | ||||
| Sauté | ||||
| 1 large onion and | ||||
| 1Tbs minced garlic | ||||
| 2 T olive oil | ||||
| Add all of the above into a large pot and simmer for 20 minutes with: | ||||
| 2-3 Tbs of chili powder | ||||
| 1-2 qt. jars of canned tomatoes | ||||
| salt to taste | ||||
| You may exchange grain for tofu, sauted with the onion and garlic | ||||
