SPINACH STRAWBERRY SALAD

In a bowl add: | |
| 3 oz. fresh baby spinach leaves | ||
| 5-7 strawberries, washed and sliced into circles | ||
| 1 stalk celery, sliced into 1/8" slices | ||
| 1/4 cup chopped walnuts | ||
| For dressing blend until creamy: | ||
| 1 c sliced fresh or frozen strawberries | ||
| 2 T lemon juice | ||
| 1/4 t salt | ||
| 1 T finely chopped sweet onion | ||
| 1 t poppy seeds | ||
| 1 T oil of your choice or 1/4 of apple for bulk | ||
| 1 packet of erythitol sweetener or stevia (optional for sweeter version) | ||
| Pour over above salad and chill | ||
