BUFFALO STEW WITH SWEET POTATOES

| Preheat oven to 350 | |||
|
In a 2 qt saucepan or larger saute: | ||
| 2 lb ground buffalo meat | |||
| 1 1/2 large onion, chopped | |||
| 2 T olive oil | |||
| When meat is sightly brown add and mix: | |||
| 1/4 t cumin | |||
| 1/2 t turmeric | |||
| 1/4 t ginger | |||
| 1 T fresh parsley | |||
| 1 T fresh cilantro | |||
| 1/2 t salt | |||
| salt and pepper to taste | |||
| 1/2 c water | |||
| Add the above to a baking dish then on top place: | |||
| 2 med sweet potatoes, cut into slices | |||
| Cover with foil and bake 40 minutes, then increase oven temp to 425, remove foil and bake till sweet potatoes are soft and brown on top | |||
| Alternately, add an additional 2 quarts of water and bake in a pot on the oven until sweet potatoes are cooked through to make a soup. | |||
