CREAM OF CELERY SOUP

|
In 4 qt saucepan saute: | ||
| 1 small -med onion, chopped | |||
| 2 celery stalks, chopped | |||
| 2-3 T oil or butter | |||
| In blender blend till creamy: | |||
| 2 stalks celery | |||
| 3 c vegetable or chicken stock | |||
| 1 c cashews, raw | |||
| 1 t celery salt | |||
| 1/2 t salt | |||
| Add to sauted veggies, stir and simmer 5-10 minutes till a bit thickened and top with: | |||
| chopped fresh dill or chives or both | |||
