INDIAN CREAMED SPINACH
(VEGAN PALAK) |

Blend till creamy: | ||
| 1 1/4 cups water | |||
| 1 cup cashews | |||
| 1/4 c lemon juice | |||
| Saute: | |||
| 2 T coconut oil (may use another oil) | |||
| 1/2 large onion, chopped | |||
| 2 cloves garlic, minced | |||
| 3/4 t cumin | |||
| 3/4 t coriander | |||
| 1 t garam masala | |||
| 3/4 t salt | |||
| When onion is soft add and continue to cook: | |||
| 2 # frozen spinach (thawed) or 2 bunches fresh | |||
| 1-2 T ginger, freshly grated | |||
| Stir in cashew cream from above, cook another 5 mintues till blended well. Adjust seasonings. | |||
