In a small bowl mix together: | ||
| 1/4 c raisins | |||
| 1/3 c sliced almonds or any nuts | |||
| 1/4 c coconut shreds (can be interchanged with other fruits and/or nuts and/or seeds) | |||
| In a small saucepan (I like to spray the pot with PAM or equivalent) you add: | |||
| 1/4 c coconut oil | |||
| 1/4 c carob powder | |||
| 1 pack coconut paste | |||
| Dissolve, mix this well and bring to a simmer until everything mixes together (no longer than one minute). Stir almost constantly. | |||
| Mix in: | |||
| 1 t vanilla | |||
| 1 packet stevia | |||
| Pour the nuts and dried fruit into the pot. Mix well. Pour into a shallow pan in a layer about 1/2" thick and stick in freezer for 30 minutes then cut into pieces and put into fridge. Must keep cold to harden. | |||
| If you let it harden in freezer for longer it is very hard to cut into pieces. | |||
